High in the remote highlands of Aponte, Nariño, a community of indigenous coffee growers cultivates something truly exceptional. At elevations above 1,700 meters, on tiny farms tucked into the Andes, these producers—members of La Cooperativa de Cafés Especiales de Nariño—have quietly mastered the art of Honey processing.
With farms ranging from just 0.5 to 1.5 hectares and a cool, dry climate unique to the region, the growers of Aponte have turned their small-scale production into a precision craft. The low humidity allows their carefully harvested cherries to dry more evenly and quickly—an ideal environment for the honey method, where the coffee is depulped but left with its sticky mucilage intact during drying.
The result? A cup that glows with tropical clarity and depth. Expect bright grapefruit and guava on the front, balanced by ripe stone fruits and a smooth caramel finish that rounds everything into a harmonious whole.
