High in the mountains of Nariño, Colombia—where the air is crisp and the soil is nourished by the ancient Galeras Volcano—smallholder farmers carry on a tradition that has made this region legendary among coffee lovers.
Nariño isn’t just a name on a map; it’s a testament to generations of dedication and expertise. Here, over 200 coffee growers from rural communities and local associations cultivate Castillo and Caturra cultivars between 1,600 and 2,100 meters above sea level. The volcanic soils and dramatic elevations create the ideal conditions to produce some of the finest washed coffees Colombia has to offer.
At harvest, each coffee cherry is hand-picked at the precise moment of ripeness. The journey continues with a meticulous 25-hour fermentation, a process that draws out the coffee’s signature clarity and layered sweetness. After washing, the beans are gently dried on parabolic beds under controlled temperatures—ensuring every lot achieves perfect, even drying and an optimal moisture level to preserve its integrity.
When these green treasures arrive at Lionrush, our commitment to exceptional craftsmanship begins. Each batch is roasted fresh to order, guided by our dedication to precision and an unwavering respect for the ritual of coffee. The result is a light roast that brims with vibrant notes of sweet fruit, raisin, and a soft cacao finish—a cup that reflects not only the land, but the many hands that shaped it.
