The story behind this drop.

Every once in a while, a coffee comes along that reminds us why we fell in love with this craft in the first place. This is one of them.

Grown in the celebrated region of Marcala, in the highlands of Camalote, this vibrant Pacamara honey-process microlot is the work of the Ruiz family—producers known for their consistency, dedication, and incredible attention to detail.

We first connected with Cristhian Ruiz five years ago, just as Lionrush was beginning to source coffees with greater intention. Even then, Cristhian stood out—not only for his deep knowledge of the land but for his humility and drive. Raised on his family’s coffee farms, he went on to study agro-engineering, followed by a master’s degree in Italy, and today contributes to the future of coffee through his research at the University of Florida in Gainesville.

It’s been an absolute honor to welcome Christian to our roastery in Miami and to now share one of his exceptional coffees with you.

This microlot is honey-processed at 1,450 meters above sea level and shines with bright lemon, orange zest, and floral aromatics, all wrapped in a silky texture with a lingering finish of delicate honey. It’s expressive, clean, and perfectly showcases the balance and beauty that Pacamara can deliver in expert hands.
